Hard White Wheat
Hard wheat with pale bran for milder, lighter whole wheat.

Hard white wheat has the same firm kernel and bread-worthy protein as hard red wheat, but its bran is pale. Red wheat's bran carries pigments and phenolic compounds that give whole wheat its darker color and slightly bitter edge, and white wheat has much less of them. The result is a whole wheat flour that's lighter in color and milder in flavor, which is why it's so popular with home millers and with families who aren't sold on whole wheat yet.

- If your kids turn their noses up at whole wheat bread, mill hard white wheat and don't say a word. It still has all the bran and germ, it just tastes gentler.
- White wheat bran still absorbs water and still gets in the way of gluten, so treat it like any other whole grain flour when you set your hydration.
