Wheat Berry

The whole wheat kernel: bran, germ, and endosperm.

The whole kernel: bran outside, endosperm inside, germ at the base.

The whole wheat kernel with only the inedible hull removed, containing the bran, germ, and endosperm. It's what home millers buy and grind into flour, and it can also be cooked, cracked, or sprouted. Whole berries keep much longer than flour when stored cool and dry.

Henry's notes from the bench

  • I keep my berries in sealed buckets in a cool spot. Bought in bulk, they're the cheapest good flour you'll ever use.
