Zest
The fragrant outer peel of citrus, without the pith.
The thin, colored outer layer of citrus peel, where the fruit's aromatic oils live. A little zest brings bright orange, lemon, or lime flavor to enriched breads, scones, and glazes without adding liquid. Take only the colored part: the white pith underneath is bitter.

- Zest straight over your sugar and rub it in with your fingers. The sugar pulls the oils out and the whole bake smells like citrus.
- Zest the fruit before you juice it. It's nearly impossible the other way around.
