Type 00 Flour

Finely milled, low-ash Italian flour; strength varies.

Type 00 is the most refined Italian flour grade: very finely milled, white, and low in ash. The grade only describes refinement, not strength, so protein varies a lot. A 00 made for pizza can be quite strong, while a 00 made for pastry or fresh pasta can be soft and weak. It's not automatically pizza flour, so check the protein or W on the bag before you use it.

  • Pizza 00 flours are usually built for very hot ovens. In a home oven that tops out lower, they can bake up pale, so many bakers mix in some bread flour or add a little malt or sugar for color.
