How fine or coarse the pieces in a flour are, also called granulation. Finer flour takes up water faster and usually makes a smoother, stronger dough, while coarser flour gives more texture but can need longer hydration and rises less. With fresh-milled flour, grind setting is one of the biggest things you control.

  • Rub a pinch of flour between your fingers. If it feels gritty like sand, give the dough a longer rest before you judge how much water it needs.
