Straight Grade Flour

White flour combining all of the mill's flour streams.

Straight grade flour is white flour made by combining all the usable flour streams from the mill, both patent and clear, instead of separating them. It has a little more ash, color, and flavor than patent flour, but it's still a refined white flour with the bran and germ removed. It's a common base for bakery flours.
