Middlings
Intermediate particles in roller milling, or a milling byproduct.
In roller milling, the intermediate particles of endosperm left after the grain is first broken, which are sifted, purified, and ground further into flour. The term also gets used for the bran, germ, and leftover flour sold as a byproduct, often for animal feed. Bakers mostly run into it when reading about how commercial flour is made.
