A mill that grinds grain between two stones, one turning against the other, which is the oldest form of milling. Home stone and burr mills work the same way, using stone or other grinding plates, and the gap between them can be adjusted from cracked grain to fine flour. They're usually slower than impact mills but give you more control over texture, and many bakers like the character of stone-ground flour.
