Stand Mixer

A countertop mixer with a hook for kneading dough.

A countertop mixer with a bowl that stays put while a dough hook spins and moves around it. It's great for enriched doughs like brioche that need a long mix, and it saves your arms on big batches. Many home stand mixers struggle with stiff doughs or large loads, and the friction of mixing warms the dough, so watch both.

Henry's notes from the bench

  • Stay on low to medium speed for bread dough. High speed heats the dough and works the motor harder than it needs to.
  • If the dough climbs the hook, stop, scrape it down, and keep going.
