Spiral Mixer

A mixer that turns both bowl and hook, built for bread.

A mixer where the bowl turns and a spiral-shaped hook turns too, so the dough is constantly being worked against the hook. It's gentle and efficient for bread dough, builds gluten without a lot of heat, and handles large or stiff batches well. That's why spiral mixers are the standard in most bread bakeries.

Henry's notes from the bench

  • Even with a spiral, keep an eye on dough temperature. Less heat from friction doesn't mean none.
