Quinoa

Andean seed used like a grain; gluten-free.

A seed from the Andes of South America, where it's been a staple for thousands of years. It's a pseudocereal, related to amaranth and spinach rather than to grasses. Quinoa is gluten-free. Rinse whole quinoa to remove its natural bitter coating (saponins) unless it's sold pre-rinsed. In bread, it's usually cooked and added as a soaker or inclusion, and quinoa flour goes into gluten-free blends.
