Grain-like seed from a plant that isn't a grass.
A seed that's cooked and milled like a grain but doesn't come from a grass. Buckwheat, quinoa, and amaranth are the best-known examples. True cereals like wheat, rye, oats, rice, and corn are all grasses. Pseudocereals are gluten-free (barring cross-contamination), so in bread they add flavor and nutrition but need wheat or a gluten-free binder for structure.
