How warm flour gets as it's ground. Fast or fine milling builds friction, so fresh flour can come out noticeably warm. Some bakers worry that heat harms flavor and nutrients, and the evidence there is mixed, but the practical effect is clear: warm flour raises your dough temperature.

  • Feel your flour right out of the mill. If it's warm, let it sit spread out for a bit or use cooler water so your dough temperature stays on target.
