Landrace Grain
Locally adapted, genetically varied grain kept by farmers.
A locally adapted grain population that farmers have selected and replanted in one region over many generations, rather than a uniform variety bred by a plant breeder. A landrace field holds a lot of genetic variety, which helps it handle local weather, pests, and soil. In the bakery that variety shows up as flour that can act a little differently from season to season, with flavor that tends to reflect where it was grown.
