Khorasan Wheat

Large-kerneled ancient wheat, sold as the KAMUT® brand.

Khorasan (Triticum turgidum subsp. turanicum) is an ancient wheat with large golden kernels and a buttery, sweet flavor. KAMUT® is a trademarked brand of khorasan wheat grown under specific standards, so all KAMUT® is khorasan but not all khorasan can be sold as KAMUT®. Its protein is often high, but the gluten tends to be weaker and less elastic than modern bread wheat, so the dough can feel extensible and slack.

  • Don't read the protein number on khorasan and expect bread flour strength. Use extra folds, and blend it with bread flour if you want a taller loaf.
