How much the dough can stretch before it snaps or tears.

The ability of dough to stretch without tearing. An extensible dough relaxes and lengthens easily (like bubblegum), which is what you need for shaping baguettes or stretching pizza.

  • If your dough keeps shrinking back when you try to roll it out, it lacks extensibility. Let it rest for 10 minutes to relax the gluten, then try again.
