How recently flour was milled and how well it's kept. Whole-grain and fresh-milled flours contain germ oils that can go rancid, giving a bitter, stale, or paint-like smell. Store them cool and airtight, and move them to the fridge or freezer if you won't use them soon. White flour keeps longer because the germ and bran have been removed.

- I keep whole-grain flour in the freezer in sealed bags. Let it come up toward room temperature before mixing so it doesn't chill your dough.
- Smell your flour before you bake. Fresh whole wheat smells sweet and nutty. Sharp or bitter means it's time to toss it.
