Italian name for einkorn, emmer, or spelt grain.
An Italian name for hulled ancient wheat that isn't one single species. Depending on the region and the seller, farro can mean einkorn (farro piccolo), emmer (farro medio), or spelt (farro grande). Emmer is the most common meaning in the US. Whole farro is usually cooked as a grain or added to bread as a soaker, and milled farro behaves like the wheat it actually is, so check the label for the species.

- Cooked farro folded into a sourdough loaf is one of my favorite inclusions. Cool it and drain it well first so it doesn't make the dough slack.
