Spelt Flour
An ancient hulled wheat (Triticum spelta) with a nutty, sweet flavor. It has highly extensible (stretchy) gluten that is weaker than modern wheat, meaning it can easily be over-kneaded and collapse if worked too hard.

- Spelt creates a dough that spreads out like a puddle if you aren't careful. Treat it gently and use a loaf pan if you're just starting out.
