Dough Sheeter

A machine that rolls dough to an even thickness.

A machine that rolls dough out to an even, set thickness by passing it between rollers, a little thinner with each pass. Bakeries use them for laminated doughs like croissant and puff pastry, and for pizza bases, crackers, and flatbreads. They save a lot of rolling-pin work and give the same thickness every time, which matters a lot in laminated dough.

Henry's notes from the bench

  • You don't need one to make great croissants at home. A good rolling pin, cold dough, and patience will get you there.
