Lamination

Lamination: dough stretched thin across a work surface
Alternating layers of dough and butter, folded over and over.

A technique where dough is stretched out very thinly on a counter (like a bedsheet) and then folded back up. It helps build gluten strength and is a great way to layer in ingredients like cheese or nuts. In pastry, 'lamination' means something different: folding a butter block into dough for croissants (see Laminated Dough).
