A heritage hard red winter wheat brought to Kansas by Mennonite immigrants in the 1870s. It helped make the Great Plains a major wheat-growing region. Today it's grown in small amounts for heritage flour, and bakers value its deep wheat flavor, though its gluten is usually less predictable than modern hard red winter wheat.
