Tunneling

A long cavity under the crust, usually from trapped gas during shaping.

A troubleshooting term for large, unwanted caverns or holes in the crumb, often right under the crust, while the rest of the crumb is dense. Common causes include underproofing, uneven shaping that traps air pockets, and pockets of flour rolled into the dough.

Diagnose and fix

Often underproofing or weak structure. Let the dough ferment longer.

Random caverns through the loaf

Degas gently during pre-shape, brush excess flour off the dough before shaping, and seal seams well.
