Ripe Starter

A starter that's active and ready to use in dough.

A starter or levain that's fermented long enough to be ready to leaven dough. It's grown noticeably, has bubbles throughout, smells pleasantly sour or yeasty, and has a domed or just-flattening top. Ripe usually means at or near peak, the sweet spot between young and overripe.

  • Look, smell, and feel. A ripe starter is airy and a little stretchy when you pull a spoon through it, not runny and not tight.
