Bread raised with baking powder or soda, not yeast.
Any bread leavened with baking powder or baking soda instead of yeast or sourdough, so there's no rise time to wait on. Banana bread, muffins, cornbread, biscuits, scones, and Irish soda bread are all quick breads. The key is gentle mixing: overworking the batter builds gluten and gives you a tough crumb with tunnels.

- Stir wet into dry just until the flour disappears. A few lumps are fine. Smooth batter usually means a tough loaf.
