Quellstück

/KVELL-shtook/

A German cold soaker for grains and seeds.

A German cold soaker: grains, seeds, or meal soaked in cool or room-temperature water before going into the dough. It softens hard bits so they don't pull water from the dough or feel gritty in the crumb. Unlike a Brühstück, it uses no hot water, so the starches aren't gelatinized.
