Hard Red Spring Wheat
Spring-planted hard wheat, usually very high in protein.

Hard red spring wheat is planted in spring and harvested in late summer, mainly in the northern US plains and Canada where winters are too harsh for fall planting. It usually runs among the highest in protein of the US classes, so it's prized for strong bread flours, bagels, and for blending into weaker flours to give them more strength. Dough made from it often takes more water and more mixing to reach full development.
