Long bread dough pieces proofing in the folds of a baker's couche
A baker's couche supports long loaves in fabric folds so they hold their shape while proofing.

A heavy linen cloth used to support dough (like baguettes) while they proof. The fabric is folded up between loaves to help them hold their shape and prevent them from sticking to each other.

  • Never wash your couche! Just scrape off the flour and let it dry. It gets better with age.
